Directions
Add your room temperature eggs to your food processor and mix with the blade attachment for 30 seconds
Turn off your food processor and add your mustard, white wine vinegar and salt to the bowl. Make sure your lid is on tight and process this for 30 seconds.
Remove the lid and use a rubber spatula to scrape down the sides. Turn your food processor on low and slowly drizzle your oil into the spout of the lid. You will see your mixture begin to emulsify or thicken
Once you have added all your oil, remove the lid and scrape down the sides again. Taste your mayo and add salt and lemon juice to your taste. Blend a couple of seconds in between adding more ingredients.

Use this delicious mayo to make your most loved potato salad or pasta salad recipes and for a real treat, add some of our imported Vidallia Onion White Balsamic vinegar to it with some chopped cabbage and carrots for cole slaw or add it to broccoli with raisins, bacon and some shredded cheddar cheese for a wonderful broccoli salad.
