We stumbled upon Debbie selling these vinegars today at the Smithfield Farmer’s Market-what a lucky find! On our menu for the evening was a recipe for ratatouille from Alexandra Stafford and her blog, Alexandra Cooks. We needed white balsamic. We had no white balsamic. Then, as if the clouds parted and the angels sang, there stood Debbie…with white balsamic! With vidalia onion to boot!
The white balsamic is good off a spoon (if you like those sort of things, and I do, I do!) but really brought out the good in our conglomerate of veggies tonight. We served the mess over Parmesan polenta (and ate many bites straight from the roasting dish).

I have absolutely used this vinegar nonstop on all my fresh veggies with a little olive oil. So much better than store bought salad dressing not to mention so much better for you! I need a new bottle soon!
